Ingredienti:<\/strong><\/p>\n

\u00b7 1 pan di Spagna
\n\u00b7 Crema al burro Sara<\/p>\n

100 g di zucchero
\n25 ml di acqua
\n2 tuorli d’uovo
\n125 g di burro (ammorbidito)<\/p>\n

\u00b7 200 g di mandorle tostate a lamelle
\n\u00b7 70 g di confettura di lamponi (solo tuorli)<\/p>\n

Procedimento:<\/strong><\/p>\n

Crema al burro<\/em><\/strong>
\n1. Preparare uno sciroppo a 121 \u00b0C con l’acqua e lo zucchero.
\n2. Sbattere i tuorli in una planetaria e aggiungere gradualmente lo sciroppo.
\n3. Continuare a montare fino a completo raffreddamento.
\n4. Aggiungere il burro ammorbidito e continuare a mescolare fino a formare una crema.<\/p>\n

Montaggio e finitura:<\/strong><\/p>\n

Spalmare la crema al burro sulla superficie del pan di Spagna.
\nMettere in frigorifero a raffreddare e poi tagliare 5 strisce, lunghe 16 cm e spesse 5 cm.
\nAl centro delle strisce, spalmare una striscia di confettura di lamponi.
\nArrotolare la prima striscia a spirale.
\nContinuare ad arrotolare le strisce rimanenti intorno ad essa.
\nUna volta assemblata la torta, spalmare altra crema al burro su met\u00e0 della superficie e anche tutt’intorno.
