R\u00e9hydrater les champignons dans l&rsquo;eau chaude.<br \/>\n2. Dans une casserole, frire l&rsquo;\u00e9chalotte avec le beurre.<br \/>\n3. Une fois bien cuite, ajouter les champignons et les cuire pendant environ 3 minutes.<br \/>\n4. Ajouter le foie gras frais coup\u00e9 en d\u00e9s et laisser brunir.<br \/>\n5. Ajouter la farine et cuire pendant 1 minute.<br \/>\n6. Verser le bouillon de poule chaud et attendre jusqu&rsquo;\u00e0 \u00e9paississement.<br \/>\n7. Assaisonner et broyer.<\/p>\n<p><em><strong>Le reste<\/strong><\/em><br \/>\n1. Faire sauter les champignons dans l&rsquo;huile d&rsquo;olive et le sel jusqu&rsquo;\u00e0 cuisson compl\u00e8te.<br \/>\n2. M\u00e9langer avec le velout\u00e9 et ajouter la ciboulette cisel\u00e9e.<br \/>\n3. Cuisiner les oeufs de caille dans une po\u00eale avec un peu d&rsquo;huile comme si c&rsquo;\u00e9tait des oeufs frits. Saler.<br \/>\n4.
