Allow the mixture to cool to 30\u00b0C, and then gently fold in the lightly whipped cream and add the semi-candied mango.<\/p>\n<p>&nbsp;<\/p>\n<p><em><strong>Strawberry gel\u00e9e<\/strong><\/em><\/p>\n<p>\u00b7 100g of strawberry pur\u00e9e<br \/>\n\u00b7 30g of castor sugar<br \/>\n\u00b7 3g of powdered gelatine<\/p>\n<p>Heat the pur\u00e9e together with the sugar to 70\u00b0C. Add the previously rehydrated gelatine and mix well. Strain into silicone moulds and freeze.<\/p>\n<p>&nbsp;<\/p>\n<p><em><strong>Mango gel\u00e9e<\/strong><\/em><\/p>\n<p>\u00b7 250g of mango pur\u00e9e<br \/>\n\u00b7 75g of castor sugar<br \/>\n\u00b7 8g of powdered gelatine<\/p>\n<p>Heat the pur\u00e9e together with the sugar until it reaches a temperature of 70\u00b0C. Add the rehydrated gelatine and mix well. Strain into silicone moulds and<br \/>\nfreeze.<\/p>\n<p>&nbsp;<\/p>\n<p><em><strong>Hazelnut frosting<\/strong><\/em><\/p>\n<p>\u00b7 1000g of chocolate fondant (58%)<br \/>\n\u00b7 160g of hazelnut grains<br \/>\n\u00b7 120ml of peanut oil<\/p>\n<p>Melt the chocolate at 50\u00b0C, then add the hazelnut grains and peanut oil.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Assembly:<\/strong><\/p>\n<p>In a mould, place the sponge cake sheet and pour the cream.<br \/>\nAdd both gel\u00e9es and keep in the refrigerator.
