120 g of white couverture
\n70 g hazelnut praline
\n20 g specula biscuit powder
\n60 g hazelnut paste
\n34 g of butter
\n1 g Maldon Salt
\n1 g grated mandarin peel<\/p>\n

Christmas spice cream<\/em><\/strong>
\n1. Mix the hazelnut praline with half of the specula biscuit and blend.
\n2. Add the hazelnut paste and the melted couverture.
\n3. Add the softened butter, salt and grated manderin peel.
\n4. Pre-crystallize at 23\u00baC.<\/p>\n

Place the spice cream in a spiral shape on the macaron. Add the chopped biscuit and cover.<\/p>\n
