\u00b7 40 neutral macaron shells Masdeu
\n\u00b7 200 g green apple cubes
\n\u00b7 20 g oil pearls
\n\u00b7 Olive oil and vanilla ganache<\/p>\n

40 ml of liquid cream (35% butterfat)
\n100 g white chocolate couverture (35% cocoa)
\n\u00bc vanilla bean, scraped
\n60 ml extra virgin olive oil<\/p>\n

Elaboration:<\/strong>
\n1. Boil the cream with the vanilla.
\n2. Pour over the chocolate, blend, and gradually add the olive oil to emulsify like a mayonnaise.
\n3. Reserve in the fridge, making sure that the film is in direct contact with the ganache to prevent it from drying out.<\/p>\n

Assembly:<\/strong><\/p>\n

Fill the macaron shell with ganache.<\/p>\n

Additionally, add the apple cubes and the oil pearls.<\/p>\n

Finally, cover them with the other shell and let it rest**.<\/p>\n
