Ingredients:<\/strong><\/p>\n

\u00b7 20-25 Mini rolled biscuits Masdeu
\n\u00b7 Coconut mousse<\/p>\n

15 g of white sugar
\n80 ml of cream (35% butterfat)
\n3 g of gelatin sheets, 2 g each sheet
\n55 g of coconut puree
\n150 g of white couverture
\n135 ml of cream (35% butterfat) (2)<\/p>\n

\u00b7 Lime mango dice impregnated<\/p>\n

100 g of peeled mango
\n2 g of lime zest<\/p>\n

\u00b7 Grated coconut<\/p>\n

Elaboration:<\/strong><\/p>\n

Coconut mousse<\/em><\/strong>
\n1. Boil the coconut puree together with the cream.
\n2. Add the gelatin to the hot liquid, to dissolve. Once ready,
\npour over the chopped chocolate.
\n3. Mix until completely melted, then emulsify.
\n4. Allow to cool to 35\u00baC. Afterwards, gradually incorporate the cream (2) whipped into soft peaks and reserve the mousse in a piping bag.<\/p>\n

Impregnated mango cubes with lime<\/strong><\/em>
\n1. Cut the mango into small cubes, 0.5 cm.
\n2. Pour into a vacuum bag along with the lime zest.
\n3. Pack 2 or 3 times, until the cubes are completely impregnated.
\n4. Reserve.<\/p>\n

Assembly:<\/strong><\/em><\/p>\n

Mix the coconut mousse with the mango lime cubes.<\/p>\n

Fill the mini coconut rolled biscuits with the mousse.<\/p>\n
