Ingredients:
· 20-25 Mini Vol-au-vents Masdeu
· Lemon cream
55 ml of lemon juice
55 ml of lime juice
120 g of sugar
140 g of egg
160 g of butter
1 sheet of gelatin, 2 g each sheet
· 80 g strawberry chopped in cubes
· 4 mint leaves
Elaboration:
Lemon and lime cream
1. Heat the lemon juice, the lime juice, the sugar, and egg in a bain-marie until thick.
2. Add the gelatin (previously hydrated) and the butter and emulsify.
Assembly:
Fill the vol-au-vent with the cold lemon-lime cream by using a curly nozzle.
Mix the chopped mint and the strawberries.
Garnish the vol-au-vent with the chopped strawberries mix.
